Medium-dark and built to work hard, Ciao Barista is the blend to reach for when one bean has to cover the whole day’s trading. It is roasted for espresso first, with enough sweetness and structure to survive being poured through steamed milk, and it arrives as ten 500g bags, 5kg to a case, in one-way valve packaging that keeps the beans fresh after roasting. A busy site can open little and often instead of leaving a sack breathing on a shelf.

Where the flavour comes from

Beans come from community farms in Central America, Ethiopia and Brazil, and the combination gives the blend its shape: Brazilian body and nuttiness underneath, Central American sweetness through the middle, and a lift of aromatic complexity from the Ethiopian component. Taken to a medium-dark roast, the result is a syrupy shot with a lasting crema that reads clearly in a cappuccino instead of vanishing behind the milk. It holds up in lattes and flat whites for the same reason, and it grinds cleanly through bean to cup machines and commercial espresso grinders alike.

Why a forgiving blend matters on a rota

Most commercial sites do not have a trained barista on every shift. They have a rota, a part-timer covering Saturdays and somebody stepping in when the kitchen is short. A forgiving blend narrows the gap between a well-dialled grinder and a rushed one, so a shot pulled a few seconds long or short still arrives sweet and drinkable. That is the practical argument for a medium-dark house bean in a café, deli, hotel or office: it lowers the ceiling slightly and raises the floor considerably, and the floor is what your customers taste on a wet Monday morning. The same logic makes it a sound choice for a menu selling flat whites and cappuccinos in similar numbers, and for a bean to cup machine running unattended, where nobody is standing over the cup to correct it.

What it asks of the grinder, the hopper and the stockroom

A medium-dark roast does not clog the way very oily dark roasts can, which keeps burrs and chutes in better condition between cleans, but it still needs a routine. Wipe the hopper, brush out the chamber and check the dose weekly, because a grinder drifting quietly out of adjustment is behind more bad coffee than the beans ever are. The maintenance schedule for a commercial coffee setup covers what should be happening daily, weekly and annually, grinder included. Stock handling is the other half of it. Keep unopened bags sealed, cool and dark, and resist the urge to decant into a display jar where light and air do their work. Let the hopper empty before you refill it, instead of tipping fresh beans on top of old ones week after week. On a site turning over a case regularly none of this takes any real effort; on a quiet site it is what keeps the last bag tasting like the first.

Choosing between Barista and the darker blends

Go darker if your customers want unmistakable strength, cocoa depth and a cappuccino that tastes like the ones they grew up on. Stay with Barista if you want the aromatics and sweetness still to be there in a flat white, or if espresso and milk drinks split fairly evenly across the day and you would rather have the aromatics than go fully dark. It sits comfortably in the middle of the Ciao bean range, and it is the easiest of them to hand to a bean to cup machine and leave alone.
